200g spaghetti or linguine
2 tbsp unsalted butter
1 tbsp white miso paste
1 tsp Woodbloom Umami Depth
2 garlic cloves, minced
30g Parmesan, finely grated
Salt and black pepper
Flat-leaf parsley, optional

1. Cook pasta in well-salted boiling water until al dente. Save 1 cup of pasta water before draining.
2. Melt butter in a wide pan over medium heat until foamy. Add garlic and cook for about 1 minute.
3. Stir in the miso paste and Umami Depth. Add a splash of pasta water and whisk until you have a smooth sauce.
4. Add the drained pasta and toss to coat. Add more pasta water as needed to loosen.
5. Take the pan off the heat. Fold in the Parmesan and taste for seasoning.
6. Serve straight away with extra Parmesan and plenty of black pepper.
