About Woodbloom
The three blends differ in intensity and processing method. Umami Depth is our foundational blend, made with heat and UV-dried mushrooms, and it works well in everyday cooking, soups, sauces, and vegetables. Umami Robust combines UV-dried and fermented mushrooms for a medium-intensity blend with more depth, which makes it better suited for roasts, hearty sauces, and heavier dishes. Umami Fermented goes furthest, using significant fermentation across all five mushroom varieties to create our boldest, most complex blend. It's the one to reach for with stews, braises, and red meat. Not sure where to start? The Discovery Set includes all three.
All three Woodbloom blends contain five wood-grown mushroom varieties: Oyster, Shiitake, Maitake, Cinnamon Cap, and Lion's Mane. Every mushroom is grown on wood substrate at our farm near Thornbury, Ontario, which produces a more intense flavour profile than conventionally grown mushrooms. The difference between the blends comes down to how each batch is dried and fermented, not from different mushroom varieties.
All Woodbloom blends have a 2-year shelf life from the date of production. Store the jar in a cool, dry place away from direct heat and moisture. No refrigeration needed. The wooden lid and glass jar are designed to keep the seasoning fresh, but once opened make sure the lid is sealed tightly after each use.
